A distinct black currant acidity is a signature of the Kenya. For us, the biggest challenge came from our decision to employ a light roast to preserve its refreshing, crisp flavors while maintaining a balance in mouthfeel between sweetness and acidity without the astringency. The key to overcoming the challenge lies in how to select the green beans with that flawless flavor – by cupping. A light roast locks in the sweetness of corn and sugar cane, leaving it sweet and sour like gumdrops.
